Why buy canned tomato sauce when it’s SO MUCH BETTER to make your own?!💁🏼♀️🔅 this light, acidic, flavorful tomato medley sauce was the perfect simple dish for a busy Sunday evening 📚 mixed with @eatbanza chickpea penne, it gives the taste of a hearty pasta dish while still providing high amounts of protein and fibers 😋🙌🏼 Recipe: sauté 1/2 chopped yellow onion in high quality olive oil. Add 2 minced cloves of garlic and cook until translucent. Add 1 chopped big tomato and let simmer for about 10 minutes. Add salt, pepper, and some white wine vinegar and cook for another minute. Add halved medley tomatoes and some baby arugula before you take it off the stove and mix with pasta! ENJOY!
